This is a great dish for summer, especially when you don’t want to spend time cooking. You can easily make it ahead, just don’t add the dressing until you are ready to serve.
Obviously you can use any bean you like, I just happen to like black eye beans, and have a 3kg bag to use up!

Black Eye Bean & Rice Salad
This versatile black eye bean and rice salad is easy and quick to prepare and is satisfying on its own or as an accompaniment to grilled meat or fish.

Ingredients
- 200g Cooked Rice, I use Basmati
- 150g Black Eye Beans
- 1 Bell Pepper, chopped (Orange or Red)
- 3 Cloves of Garlic (finely chopped)
- 1 Small Onion (finely chopped)
- For The Dressing
- 3 Tablespoons of Olive Oil
- 2 Tablespoon of Cider Vinegar (or White Wine Vinegar)
- 1 Teaspoon of Dried Thyme
- 1 Teaspoon of Dried Oregano
- Salt & Pepper, to taste
Instructions
- Wash and cook your rice as you normally would. When done leave to cool.
- While the rice is cooking add a drizzle of oil to a pan and cook the onion and garlic over the lowest heat for around 10 minutes. Leave to cool down.
- Once the rice and onion has cooled down combine everything in a large bowl.
- Add the ingredients for the dressing into a small jar and shake vigorously then add to the bean & rice salad and combine well.
Notes
I've based the portions of this recipe on dried beans which require overnight soaking and additional cooking time but you can absolutely use canned beans.
You can also use a mix of wild rice with regular rice.
