Taking less than 45 minutes to prepare and cook, this is a tasty yet simple dish. Serve it with a warm bean and rice salad and if you like meat, it goes well with a few slices of cold ham.
Or you could make like me and just eat the whole head as soon as it comes out of the oven!

Coconut Spiced Cauliflower
As delicious on it's own as it is an accompaniment to a main dish.

Ingredients
- 1 Head of Cauliflower
- 5 Tablespoons of Coconut Oil
- 2 Teaspoons of Cumin
- 1 Teaspoon of Turmeric
- 0.5 Teaspoon of Ginger
- 0.25 Teaspoon of Cinnamon
- 0.25 Teaspoon of Fenugreek
- 0.25 Teaspoon of Chilli
- Pinch of Salt & Pepper
Instructions
- Pre-heat oven to 200°C/400°F/Gas Mark 6
- Cut cauliflower into florets and place on a grease-proof paper lined tray
- Melt coconut oil over a low heat and add spices
- Brush florets with oil
- Cook in middle shelf for 30 minutes or until 'forkable'. You know your oven, I like some bite.
Notes
You can use any spices but I'd say the turmeric is essential for the nice yellow colouring
