This is quick and easy meal to make that is super easy to adapt. If you don’t have panko breadcrumbs you can use regular. When making my own I like to blitz the breadcrumbs with a clove of garlic and the herbs and lemon zest. Like I said, so easy to adapt to your liking.

Lemony Chicken Milanese

Ingredients
- 1 x 250g Chicken Breast Fillet
- 1 Red or Brown Onion, diced
- 2 Garlic Cloves, finely chopped
- 400g Tin of Chopped Tomatoes
- 25g Panko Breadcrumbs
- 150g Wholewheat Pasta (Spaghetti or Fusilli)
- 0.5 Teaspoon of Dried Oregano
- 0.5 Low Salt Vegetable Stock Cube
- Salt and Pepper
- 1 Lemon
- 1 Tablespoon of Olive Oil

- 0.5 teaspoon of sugar or granulated sweeter
- 1 Teaspoon of Dried Chilli Flakes
Instructions
- Preheat your oven to 200°C/Gas 6 and boil a kettle of water for your pasta.
- Slice the chicken in half, imagine you're cutting a bagel in half so you have 2 thinner fillets.
- Cover your fillets with cling film and whack them with a rolling pin until flattened to about 1cm thick.
- Zest the lemon and combine with breadcrumbs and a pinch of salt. Spread onto a plate
- Mix 1 tablespoon of lemon juice with 1 tablespoon of olive oil and the Oregano in a shallow bowl.
- Dip the chicken fillets in the lemon juice and olive oil mixture then coat in the breadcrumbs until both sides are covered.
- Place the chicken on an oiled oven tray and put in the middle shelf of your oven for around 20 minutes
- While the chicken is cooking heat a pot with a drizzle of oil over a medium heat and add the onion, cook for around 5 minutes, until softened.
- Add the garlic and cook for a further minute.
- Add the chopped tomatoes, 3 tablespoons of water and the stock cube. Bring to the boil then reduce to a medium-low heat and cook for 15 minutes, stirring occasionally.
- While the sauce is cooking add your pasta to a large pot of boiling water with a good pinch of salt/lo-salt. Bring to the boil on a high heat then reduce to a lively simmer and cook for 10 minutes or until cooked. Read the packet.
- Once the chicken is cooked serve it with the pasta and sauce. If using spaghetti add it first, pour over the sauce and add the chicken on top. If using pasta shapes mix the pasta with the sauce and serve it on the plate next to the chicken. Add pepper to taste
Notes
At stage 10, add the sugar/sweetener if you want to ease the acidity of the tomatoes and the chilli flakes if you want a bit of heat to your sauce.
