Yet another of my Middle Eastern inspired dishes. This time I adapted a basic butternut squash recipe by roasting the squash in baharat and added harissa paste.
This recipe makes around 1.5-2 litres of soup, which you can freeze.

Spiced Butternut Squash Soup
This warming soup is delicious served up with some crusty bread.

Ingredients
- 1 kg Butternut squash, peeled, deseeded and cut into cubes
- 1 tablespoon of baharat
- 0.5 tablespoon of paprika
- 1 teaspoon of wild thyme
- 1 tablespoon of vegetable oil
- 1 Diced medium to large onion
- 2.5cm piece of ginger, peeled and chopped
- 4 teaspoons of red or green harissa paste
- 750ml Vegetable stock
- 160ml Coconut cream
- Salt & Pepper
Instructions
- Preheat oven to 180°C/gas mark 4. In a large bowl add the dry spices and cubes of butternut squash and mix until well coated.
- Place the squash on a non-stick baking tray and roast for 40 minutes, or until tender.
- While the squash is roasting heat the oil in a medium sized pan over a low to medium heat and add the onion, ginger, and a pinch of salt. Cover and sauté for 10 minutes, stirring occasionally.
- Stir-in the harissa paste and cook for another 2-3 minutes.
- Add the roasted squash, stock, and coconut cream. Cover and bring to the boil then simmer for 5 minutes. Remove from heat and let cool slightly.
- Purée the soup in a blender/food processor until smooth.
- Return to the pan and heat gently, add a little more stock or boiling water if it is too thick.
- Serve with a sprinkle of freshly ground pepper and crusty granary bread.
Notes
If you don't have coconut cream use 400ml of coconut milk and reduce stock to 450ml

Spiced Butternut Squash Soup
